Samah's Dessert.




Today I want to share a recipe of a dessert with you. This dish was prepared by my friend, according to her, she just thought something and started mixing things. When she was done, the result was amazing.


Though it has lot of calories but it is worth trying at least once.
So without further ado, I will share recipe here.

Ingredients:


1.      Unsalted biscuits : 1 pack.
2.      Cream Caramel : 2 sachets
3.      Powdered whipping cream : 2 sachets
4.      Kiri Cheese : 8 cubes
5.      Nescafe : 2 table spoon
6.      Condensed milk: 1 cup
7.      Fresh Cream : 1 cup
8.      Powdered biscuit: 2 packets.
9.      Liquid Whipping cream:  1 cup

Preparation:

Add all the ingredients in the blender and mix.
In a serving dish crush the unsalted biscuits and make a layer in the bottom. Now add the mixture at the top and garnish it as you like.
You can also add crushed nuts with the layer of biscuits. Place the dish in refrigerator at least overnight. It will allow the mixture to settle .
Wow you are done, taste it and share with family and friends, I am sure they will like it.

As my friend prepared this, so I named it Samah's Dessert. Her name is Dr. Samah Matar, she is an amazing teacher from Egypt.

Easy Potato Cutlet: #Recipe




Today I will tell you how I make easy potato cutlet. I hope you will enjoy this quick recipe.

All you need for this recipe;
  • Mashed potatoes ( 3 medium size)
  • Onion bulb ( small)
  • Coriander
  • 1 Egg medium size, lightly beaten
  • 1 tablespoon of lemon juice
  • 1 Teaspoons chopped green Chili ( or according to taste- optional)
  • Cumin seeds ( optional)
  • Coriander powder or seeds ( optional)
  • ½ cup all purpose Flour or bread crumbs
  • Salt ( according to taste)
  • Black pepper ( according to taste)
  • Vegetable oil, for pan-frying


These(in picture on the right) are some optional ingredients that you can add. 




Directions:


The best thing that I like is, main ingredient is potato little salt and pepper, rest whatever you want to add to enhance the taste is up to you.

 The way, that I normally use is;

You can use leftover potatoes or boil them until soft. Peel them and mash them in a large bowl, add salt and all other spices you want. Then combine them well with hands.

After mixing leave the mixture for an hour in fridge and then divide whole mixture in 6 equal parts. For each portion roll a compact ball and then flatten and make any shape that you like. Beat one egg and then dip the cutlet in this and after wards roll in all purpose flour or bread crumbs.

Now they are ready to fry. Normally I do not deep fry I just add few tablespoons (3-4) of vegetable oil on platter or sauté pan over medium heat.


Fry the cutlet, in batches of 2 or 4, until golden brown and crispy. They are ready and you can serve them hot with ketchup or chili or hot sauce and tea. 


Note:

You can add boiled and drained chicken, vegetables like, peas, carrot, corn etc. to enhance the taste. You can prepare this mixture or cutlet and keep in fridge in air tight container and fry them when you need. You can use in sandwich too.

Chili Sauce ( Chatni )


Different types of Sauce are commonly used in South Asia with food to add some spicy touch to our food.
Today I will tell you about an easy recipe of a sauce that you can prepare to enhance the taste of any kind of food that you will prepare for your Lunch or Dinner.
All you need ;

  1. Blender 
  2. Cucumber ( 1 medium size)
  3. Lemon juice of ( 1 medium size lemon)
  4. Mint
  5. Red or Green chilies ( 2-3)
  6. Coriander 
  7. Tomato ( 1 medium size)
  8. Garlic ( 3 cloves , chopped)
  9. Ginger (small piece)
  10. Onion ( 1 medium in size)
  11. Salt ( according to taste)
  12. Yogurt 


Recipe :

Chop all ingredients and put them in the blender with 1 or 2 spoon of yogurt. Blend for 2 minutes and it will be a thick paste. You can add some water if you need a thin mixture.( If you do not want to add yogurt you can simply add water)
You can use it with food and store in an airtight jar and keep refrigerated after use. 


If you need hot sauce then you can add more chilies than I mentioned . It all depends on your choice. You will really like the taste as it will be little sour and spicy.

Majoon Tamar ( Date Balls)


                                 
Dates are extensively used in Saudi Arabia. But its use increases during Holy month of Ramadan in every Muslim majority country across the world.  Dates are source of energy that is why it is advised by our Beloved Prophet Mohammad ( P.B.U.H) to use it in Ramadan. Dates are very good and sweet  in taste.  Because of sweet taste Arabs eat dates with sugar free Arabic coffee or kahwa.

Here in Saudi Arabia dates are used in different forms like whole dates , ground dates coated dates or dates with biscuits and many other things. It is an essential part of food every day , people serve guests with this also send it as gift to friends and family. It is really popular here.

Today I will share very simple and quick recipe of a delicious sweet with you.

Ingredients:

You will need;
  1. Cleaned , and mashed ( ground) Dates half kilogram.
  2. Nuts ( that you like)
  3. Pinch of Salt
  4. Half tea spoon of black pepper
  5. Half tea spoon crushed cardamom seeds
  6. Coconut powder
  7. Sesame seeds 
  8. Raisins
  9. Jam for coating. 
Recipe:




Clean and dry the dates then take out its seed and mash it , you can use your blender to make its paste as you can see in picture. Otherwise you can get it from market , it is easily available and cheap in price. 
Then you will grind all the dried nuts that you like. Add all the ingredients in dates paste then mix well . Now you can make small balls or any other shape you want.

For coating you can roll some of balls in sesame seeds and some of them in coconut powder. If you want to add both in the mixture you can. You can also dip them in jam and put icing sugar or nuts.
Now have a taste of yummy full of energy Arabic sweet with green tea.


You can also pack them with biscuits and other sweets and gift to your friends and family , I am sure they will like it.

Store Date Balls in air tight jar at room temperature.

In first picture on top you can see the balls rolled with sesame seeds and coconuts. That is the final shape of your sweet. But can can have in any shape you want.

Roasted Chicken

Today I will tell you how I always cook a tasty roast.

Ingredients that you need are :

Chicken 1100 grams 
yogurt - 1/2 kg
black pepper ( according to taste ) ( grounded)
salt ( according to taste )
garlic 3-4 cloves ( grounded)
ginger ( according to taste ) ( grounded)
Oil ( preferably Olive oil)
oregano ( 1/2  tea spoon)
soya sauce ( 1 table spoon)
Aluminium Foil
Oven ; preheated from 15 minutes.

Preparation :

Clean chicken and make some cuts on it so the mixture will penetrate inside to enhance taste.
Put yogurt with all written spices in a large bowl , mix all well. 
Now put your chicken in the mixture , try to soak it properly in mixture so the mixture stick with all the pieces . Now leave this to marinate for half and hour .
Take a baking tray , grease it with oil and then place all the pieces of chicken in that . Now cover non sticky tray with an aluminium foil and cover well. 
Now put your chicken in oven for 20 minutes then take it out try to turn over the pieces and put some olive oil on it. Cover it again with foil and put back for 20 minutes.
Yogurt will produce a lot of water , if your chicken is cooked you can remove excessive amount to water and then put oil and recook from other side . But it must not be watery at the end that's why it is better to remove excessive water in the middle when you will turn around.
After 20 minutes take out the aluminium foil now put chicken back for 2 minutes with out lid to take some golden brown color.
Here you go the yummy roast is ready.
Enjoy with bread and chili sauce.  

Unfortunately i forgot to take picture when it was done as i was dying to taste it ... and in excitement i totally forgot. The color was really nice and all liked it a lot . I cooked it for some friends who visited us on weekend.

Let's Cook Biryani

If you like to eat biryani then i have a recipe for you i hope you will like this.

Ingredients needed for Biryani are;

Chicken  :  1 and half kg
Rice : 1 Kg ( wash and soak for half hour)
Water
Yogurt ¼ cup
Spice for Biryani : 1 pack ( you can find this in supermarket )
Oil : ¼ cup
Vinegar : 1 tablespoon
Onion : 3 medium size
Tomatoes : 3 medium size
Potatoe: 1 medium size
Lemon : 1 big size
Cucumber : 2 medium size
Coriander : according to taste
Green chilies : 2,3
Salt : according to taste

Recipe :

Put spice of biryani in a large bowl and put yogurt , mix them properly and add washed and cut pieces of chicken , and mix in such a way that all chicken pieces are covered with mixture . Leave to marinate for almost 2 hours . 
                                                                                                                 
Turn on heat and start cooking rice , as you will be better familiar with the method to cook your rice . I normally soak rice for half hour and take double amount of water than rice as in half kg rice I put 1 liter of water .

Put required quantity water in pot , add salt according to your taste , add 2 table spoon of oil , 1 table spoon of vinegar and put on fire . 

When water will start boiling rinse your rice and add rice in water and turn heat to full . 

\Do not cover rice at this stage. When the level of rice and water will be almost equal or water little bit higher, then bring heat to lowest level , cover the rice and let it cook for 5 , 6 minutes to dry all water . Rice must be little bit hard as you have to put on fire again when you will layer with chicken

 Close heat open lid of pot and let the rice, dry , you should not properly cook rice but keep them little bit hard.         
                                                                   

Cut onions, tomatoes , cucumber , chilies  and peeled potatoes first in separate plates .

   

Take a large cooking pot and put oil in it , turn on heat on medium and put finely chopped onions , let them brown . When the color change to brown take small quantity of browned onion out of oil , put in a plate to dry . Now in remaining brown onions put tomatoes and potatoes and cook until tomatoes and potatoes will softened and then tomatoes will disappear leaving only skin behind , also check that oil has left the mixture. Now put your marinated chicken in it. Cook on low heat until the oil will become separate from the gravy . 

 

Now put 1-2 table spoon of oil in a pot , add 2-3 table spoon of water and put on fire , put 2,3 cardamoms , when water and oil will start boiling close heat . Now put half of rice in pot and then add a layer of chicken , put half chicken . Now put cut slices of lemon , chopped coriander , cucumber and then put some rice to cover meat and then again put lemon , coriander , cucumber , repeat until rice and chicken is finished. You can add some food color and then put the browned onions and cover the lid and leave on low heat for 10 minutes .
After 10 minutes you can open and if you want them mix the layers and enjoy a yummy biryani , I hope your tummy will like it. 



 

 
                             
  

Spices can be added according to taste if you want to eat a hot biyani put more spices , if you want to eat light , then add less spices.
