How to prepare smooth textured Oats Soup recipe

Ingredients:
1 cup rolled oats
2 cups vegetable broth
1 onion, chopped
1 garlic clove, minced
1 carrot, chopped
1 celery stalk, chopped
1 teaspoon olive oil
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley or chives, for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the chopped carrot and celery to the pot and continue to sauté for a few minutes until they begin to soften.
- Add the rolled oats to the pot and stir well. Cook for 2-3 minutes until the oats are lightly toasted.
